Xylan is a high-quality non-stick coating that does not present issues if used properly. This version of Xylan is bronze-colored, and like most non-stick coatings that are lighter than black, it tends to darken with use, which is completely normal. It does not mean the non-stick coating is no longer working.
You only start to notice food sticking when the non-stick layer has worn down or disappeared. This deterioration is always due to improper use of the pan, such as:
Scrubbing the inside of the pan with a scouring pad when washing.
Overheating the pan during cooking (e.g. high heat without food or oil).
Using abrasive utensils with the coating, like metal tools that scratch the surface.
On the other hand, a manufacturing defect in a non-stick coating shows up as bubbles on the surface, meaning the coating did not adhere properly during the production process
